For three weeks before harvest, our fields in Uji are covered in traditional bamboo mats. This deliberate deprivation of sunlight forces the tea plants to overproduce chlorophyll and L-theanine, resulting in that electric green color and distinctive umami sweetness.

Stone-Ground Tradition

Each mill rotates at a speed of precisely 30 RPM. To grind any faster would generate heat, destroying the delicate aroma and nutrients of the Tencha leaves. It takes one hour to produce just 30 grams of matcha.
